Rogan Josh: A traditional lamb or sheep meat dish made with traditional spices and Kashmiri red chili powder. Interestingly, our ancestors didn’t use onions, garlic, or tomatoes in their cooking, but over time, these ingredients were added, and the taste remains largely the same.

Tabakmaaz: A delicacy served on top of Wazwan Trami (traditional rice plate served at weddings and special occasions). Slow-cooked lamb ribs are deep-fried in ghee or oil until crispy on the outside and soft on the inside. It’s my personal favorite!

Yakhni Maaz: A special Kashmiri dish that’s a staple at weddings and gatherings. Slow-cooked lamb in its mutton stock, cooked with thick yogurt gravy, and garnished with dried mint and fried onions. Just writing about it makes my mouth water!

Alve Kufta: A versatile potato dish loved by Kashmiris. Chopped potatoes are fried in oil, mixed with minced meat, onions, red chilies, and spices, and then cooked in meat stock until soft. Finally, it’s deep-fried and boiled until it tastes ‘gharukh syun’.
